Our split-level brewpub welcomes Lyons and Boulder locals, high country visitors from across the nation and globe.  (Many of them headed for nearby Rocky Mountain National Park and the other high country treasures in our neck of the woods.)

What brings them all back? Great beer and food, exceptional bands and Dixie-meets-the-Rockies hospitality.

We launched our canning operation in the fall of 2002 with a hand-canning line in the 60-year-old barn next door to our pub. Today it's our pride & joy and makes us The Little Brewery That Cans.

At Oskar Blues, we dig bodacious beer.  We carefully craft our robust brews in small (20-barrel) batches with loads of the best ingredients.  The results are 4-dimensional beers with layers of flavor, beers far removed from the mainstream, designed for beer adventurers.

In 2002 we became the first US microbrewery to brew and can its own beer. We started hand canning our beer two cans at a time, on a small table-top machine.

Why cans? We thought the idea of our bold, hoppy pale ale squeezed into a little can was hilarious. It made us laugh for weeks.

But then we discovered that the belief that cans impart flavor to beer is a myth. The modern-day aluminum can and its lid are lined with a water-based coating, so the beer and the can never touch. Cans, we discovered, are actually good for beer.  Cans keep beer especially fresh by fully protecting it from light and oxygen.  Our cans also hold extremely low amounts of dissolved oxygen, so our beer stays especially fresh for longer.  Cans are also easier to recycle and less fuel-consuming to ship.

Better still, cans make it easier for beer fiends to enjoy great beer outdoors, where a fine brew is especially satisfying.  Our cans also give us big pleasure when we hand somebody the first canned beer that ever put goosebumps on their back.

"We're in this," says our man Dale, "to have fun and put some extra joy on the planet. We love the way people's heads spin around after they try one of our monster canned beers.  'That came out of a can?' We hear it all the time."

Our "Canned Beer Apocalypse" has now changed the way craft beer consumers perceive canned beer. (Our beers are now hand-canned on a five-cans-at-once machine here at our brewery.  If you're ever out this way, come in and see it.)

Our uncanny efforts have also allowed us to enjoy some head-spinning excitement. Since we began canning, our beers have won loads of honors and accolades and we've grown by over 800%.  We're now the largest-producing brewpub in the United States (hooray!) and our scrappy little outfit is one of the most talked about craft breweries in America.

In addition to having a passion for full-flavored beer, we also have a big love for delicious, down-home cooking.  Our family-friendly, folk-art blessed restaurant is home to a mighty menu of Cajun, Creole and Southern-style comfort foods that reflect our founder’s southern upbringing.

Our list of acclaimed, top-shelf comfort foods covers a lot of tasty ground.  We serve up everything from soul-stirring gumbo and other New Orleans-style treats to exceptional fried catfish (the best in the Rockies), bodacious burgers, and mouth watering Mexican fare.

We also take pride in our homemade pizzas, Dixie-fried bar fare, and an array of vegetarian and low-fat offerings.  Craving dessert?  Our Chocolate Dump cake is one of our most revered after-dinner treats. We also serve a wholesome lunch and dinner special each day.
